There is such a city in China known as the "hometown of pastries", which is Jiangxi Province in the south-central part. Jiangxi's pastry making has a long history and can be traced back to ancient times. For example, it is said that in the Tang and Yuan Dynasties, when farmers from Leping, Guixi, Yingtan and other counties around Jingde town went to work as potters, they were busy with work and mixed the flour they brought with them and baked it directly on the surface of the kiln, forming the original Walnuts cookie. Later, this dry food gradually became popular because it was convenient for daily storage and long-distance transportation of porcelain, and was named "peach cake" because of the addition of peach kernel powder

Jiangxi has a variety of traditional famous pastries, such as Walnuts cookie, Fengcheng frozen rice cake, Jiujiang crisp cake and Jiujiang tea cookies. These pastries have their own characteristics, some are famous for their fragrance, and some are famous for their crispness, which meets the needs of different consumers.

These traditional pastries not only carry a profound cultural heritage, but are also the crystallization of the wisdom of the people of Jiangxi.

Most of the founders of the pastry shops that can be found in major cities across China are from Jiangxi.

As a manufacturer of food machinery, we are of course very interested in Jiangxi products. Last week, we participated in an expo held in Jiangxi. Most of the visitors were skilled pastry makers. Now people are increasingly demanding high-end food, and handmade pastries are also very popular. However, due to the high cost and low efficiency of manual production, food manufacturers have to start looking for a machine to replace manual production, but it is really difficult to find a machine that is similar to manual production.

We started to develop a new Encrusting machine, also known as a Divider/Portioning Machine, to make walnut cookies last year. Although walnut cookies are a seemingly simple product, they have extremely high requirements. It is a very crispy biscuit, and the dough mixed with materials is also relatively loose. Many ordinary machines have a hard taste. We developed this model BK- 400 Encrusting machine by understanding the unique properties of walnut cookies dough.

* In terms of structure, the mixing and extrusion of the dough is less than that of ordinary encrusting machines, and the original characteristics of the dough are maintained as much as possible.

* In terms of power, a high-power motor is used, and the machine has sufficient power.

* In terms of material, we use all 304 stainless steel, and other parts that come into contact with food are made of food grade materials.

At this expo, we were also fortunate to discuss with many skilled pastry chefs. This machine is also very popular with them. 

If we want to make a suitable and easy-to-use machine, we must have the participation of pastry chefs. We need their suggestions to better improve our machines and achieve good results.

During our long-term discussions with foreign customers, we were surprised to find that this machine is not only suitable for Chinese walnut cookies, but also for the production of some other cookies, such as Chocolate chip cookies, oatmeal cookies, Kourabiedes, etc.
The dough of these cookies contains a lot of particles, and it is very important to maintain the integrity of the particles. In the machine characteristics-structure mentioned above, this machine is less destructive to the dough when extruding the dough, so it can retain the integrity of the particles to a large extent. We also tested the Kourabiedes formula given by the customer to confirm the perfection and practicality of this machine.
